
Ingredients
225g plain flour plus extra for rolling out
2 teaspoons ground ginger*
1 teaspoon cinnamon
½ teaspoon bicarbonate of soda
225g sugar
110g butter or block margarine
1 egg beaten
2 tablespoons golden syrup
To decorate (optional)
- Round sweets
- Raisins
- Chocolate
- Cake decorations
- Icing
- Line a large baking tray with greaseproof paper or alternatively grease with a small amount of oil
- Mix all dry ingredients and rub in the butter or margarine (you can use a food processor if you have one)
- Add beaten egg and syrup and work into a ball
- Wrap dough in cling film and chill in fridge for 15 mins
- Preheat oven to 180C/160C Fan/Gas 4
- Dust a surface lightly with flour and roll out dough to 0.5cm thickness
- Cut your dough into shapes of your choice
- Place your creations on the baking tray, leaving a gap between and bake for 12-15 mins or until lightly golden brown
- Leave on baking tray for 5-10 mins to harden and then transfer to a wire rack to cool completely
- Now for the fun part, decorate your shapes to your very own personal style
* You can reduce the amount of ginger or even omit completely if preferred to give just a sweet cookie taste.
